Cooking Class Week 4

The 4th cooking class was held Sunday March 13th.  We greeted each other with eager excitement.  What will we cook and eat today?  The main entrée “Hunkar Begendi”, meaning The King’s Choice.  We sautéed onions with chopped beef.  We added diced tomatoes, green peppers, and an array of herbs and spices.  A fairly thick Béchamel Sauce with roasted smashed eggplants was prepared.   We took the ...

Cooking Class Week 3

On our 3rd cooking class held March 6th, we went vegan and vegetarian.  Chef Nur made “Kisir”, a bulgur salad with parsley, green onions, vidalia onions, and tomato puree.  Seasoned with Turkish herbs and spices. She also wanted to show us an Izmirian Potato Salad.  This healthy salad was mixed with dill pickles, chopped fresh dill and parsley. On our 2nd cooking class we had a very special friend and chef Humeyra Ozcan who taught us how to prepare “Badem Corbasi”.  This soup was made with ground almonds and milk.  The ground almonds were browned in unsalted butter.  She added  some flour to make a roux.  This thickened the soup.  The soup was then garnished with toasted almonds ...
